Egg Free Chocolate Cake

Eating cakes isn’t something that I do very often, I can’t eat egg so finding pre-made cakes is difficult and finding recipes that make a good and tasty cake was always a problem – oh how things have changed. It was John and mines anniversary today and I wanted to make a cake to celebrate. So I googled around and found this recipe. As I hadnt baked anything for about 10 years I wanted a simple recipe and you couldnt get much simplier than this 🙂

I wanted to make a note of the recipe, best place to put it was on here as I’ll definitely be making it again, it was delicious 🙂 and sooo simple 🙂

  • For the cake:
  • 160g flour
  • 2 teaspoons baking powder
  • 130g caster sugar
  • 150 ml milk (or soyamilk)
  • 60g melted butter (or margarine)
  • 1-2 tablespoons cocoa
  • For the icing:
  • 300g icing sugar
  • 1 1/2 tablespoons cocoa
  • 2 teapoons vanilla sugar (optional)
  • 100g butter (or margarine)
  • 3 tablespoons coffee

Preparation method

Prep: 15 mins | Cook: 25 mins

Preheat oven to 200 degrees C/ gas mark 4 and grease a round cake tin (22cm).

For the cake: Mix all the dry ingredients in a bowl. Stir in the melted butter and milk and mix well.
3.
Pour into the greased cake tin and bake for 25 minutes.

Remove and leave to cool on a wire rack.
5.
For the chocolate filling/icing: Mix all the dry ingredients in a bowl. Stir in the butter and coffee and whisk quickly, until smooth.

Tip

This recipe makes a lot of icing so what I do, is I carefully cut the cake in half (horizontally) and put the icing on the bottom half like I’m spreading some butter on a sandwich. I then put the top half back on and use the rest of the icing on top to decorate.
