Salmon Pasta

Found a delicious and easy recipe for a great pasta dish, which although a creamy sauce uses my lactose free milk and cheese 🙂

The recipe can be found here but here it is with a few tweaks

Ingredients

  • 85 g butter
  • 1 small onion, finely chopped
  • 15 g all-purpose flour
  • 2 cloves fresh garlic
  • 500ml lactose free milk
  • 1 teaspoon tomato puree
  • 60 g grated Romano cheese (or any cheese)
  • a handful of fresh cherry tomatoes
  • a handful of fresh mushrooms
  • 285 g smoked salmon, chopped
  • 448 g penne pasta
  • 1 spring onion (for extra taste)

Directions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
  3. Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Add te tomato puree. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in tomatoes and mushrooms (and spring onion)., and cook over low heat for 4 minutes.
  4. Toss in smoked salmon, and cook for 2 more minutes.
  5. Mix in the pasta.

Really simple to cook and absolutely yummy 🙂
